Snow days and resolutions

Last week the whole family was snowed in. I absolutely adored four full days with commitments, no obligations, and no place to go.

The Candidate went back to work on Friday after a delay, but that time was so refreshing. We are so busy all the time; I wouldn’t mind a few more snow days this season!

A second reason I loved being snowed in was the extra time to cook and bake. I’m the worst blogger ever, so I didn’t take any pictures of the meals, but I just enjoyed being back in the kitchen and even doing some meal planning for this week and next.

One of my Lenten Resolutions is to eat meatless on Wednesdays as well as Fridays. I love eating meat and feel strongly about a protein based diet, so this is a real effort for me, giving up the meat AND finding protein substitutes.
